There are hundreds of EVM for each seat. They have to open them up one by one, see the numbers and add them up.

Every loksabha seat has some legislative assembly seats. Every legislative seat seat has hundreds of polling station, every polling station may have 1-4 polling booth.
Each booth has one control unit
Each machine is checked for proper seals, presiding officer's diary is opened and data recorded and then evm control unit is switched on to see which candidate has got how many voted.
At each step polling agents of all parties/ candidates can witness and verify the process.
